Store lotus roots in the fridge, wrapped in a damp cloth or kitchen paper in a plastic bag. They are at their best when very fresh, but can be kept for a few weeks.

Lotus root is excellent for incorporating the flavours of other ingredients into the recipe.
I add broccoli, sugar snaps, Chinese celery, asparagus and chilli.
How do you peel the lotus root?
Rinse the carrot under cold water and then chop off the ends. Use a peeler to remove the skin, peel until the white flesh underneath is exposed.
How to prepare lotus root?
Stir-fried lotus root slices: cook on medium-high heat for 3-4 minutes.
Cooked (in a bowl with mixed vegetables or as a topping to a rice dish): Put the slices in a pan with boiled water and a dash of vinegar. Cook for 5 minutes, drain and serve.
Baked: Marinate with olive oil, salt & pepper, and chilli flakes. Fry until crispy on high heat for 2-3 minutes, turning halfway through.
What to do if the slices are browned?
Drizzle the lotus root slices with some lemon juice or put them in vinegar.
